This Easy & Nourishing Breakfast Bowl can be put together in minutes, and will keep you energized throughout your morning!
Replaced sugar-laden boxed cereals with this delicious and healthy breakfast. If you cook the sweet potato the night before, it comes together in just a few minutes.
To roast the sweet potato, wash well and cut in half lengthwise. Drizzle with a little coconut oil or ghee. Place cut side down and roast at 375 F (190 C) for 25-35 minutes, or until soft. Or you can cook the potato in the microwave. Wash well, poke with holes, and cook for about 5-10 minutes until soft.
This breakfast would also be wonderful with some of my yummy Avocado Green Sauce.
Read here about the benefits of fermented foods. And here’s my recipe for naturally fermented Homemade Sauerkraut, and another recipe for my favorite kimchi.
