This refreshing and nourishing Cucumber Avocado Peach Summer Salad is easy to put together and bursting with flavor!
This salad is great for bringing to gatherings, because it’s best to prepare it a couple hours ahead of time. This gives time for all the flavors to blend and makes the salad really delicious! I love salads which can be made ahead, since then I don’t have to spend time chopping away in the kitchen just before dinner.
This summer salad gives you a yummy opportunity to add more healthy fats to your diet with the avocado and olive oil. And avocado contains not just healthy fats, but also:

- 4small cucumbers, sliced(about 2 cups)
- 2cups peaches, nectarines, or apricotscut into bite-sized pieces
- 1 avocadocut into bite-sized pieces
- 1small red onion, chopped
- 1/4cup feta cheese, crumbled(optional)
- 1/4cup walnuts, chopped(optional)
- 2tablespoons olive oil
- 1tablespoon apple cider vinegar
- 1 lemon, juice of
- 1tablespoon honey(preferable raw)
- fresh or dried basil, to taste(or mint)
- sea salt and pepper, to taste
- Mix all the salad ingredients, except the walnuts, in a medium sized bowl.
- Mix the dressing ingredients in a small jar and shake well.
- Pour the dressing over the salad and mix well. Cover and refrigerate for a couple of hours. Add the walnuts just before serving.
- Enjoy!
