If you’re in a hurry, you can easily make this pie without the crust. It would be more like a mousse in that case, and you could put it into individual ramekins or small bowls instead of a pie dish.

No Bake Chocolate Banana Pie

Ingredients
For the Pie Filling:
- 1cup nut butter of choicesuch as peanut butter, almond butter, or cashew butter
- 4medium ripe bananasat room temperature
- 1/4cup coconut oilmelted
- 2tablespoons cocoa powder or cacao powder
- 2teaspoons pure vanilla extract
- 1/4teaspoon sea salt or Himalayan salt
- sweetener of choice, to tasteSuch as stevia, honey, pure maple syrup, or coconut sugar. I like to use a pinch of stevia, or 2 tablespoons of maple syrup.
For the Crust:
- 1/2 cup nuts of choice
- 1/2 cup shredded coconut
- 1/3 cup pitted dates
- 1/8 teaspoon salt
Instructions
- For the crust, combine all ingredients in a food processor and blend until crumbs form. Transfer to a round pie dish. Press the crust into the pan firmly.
- For the pie filling, blend all ingredients until smooth (no need to clean the food processor after making the crust). Pour the filling over the crust, and refrigerate about 3 hours, or until firm. Or if you can't wait, put in the freezer until firm.
- Decorate with crushed nuts, chocolate chips, or chocolate sauce, if desired.
- Store left-overs in the freezer and thaw slightly before eating.

I was having a hard time finding natural vanilla here so I started making my own. I get whole vanilla beans from amazon, cut into 1 inch pieces, and just soak the beans in vegetable glycerin for 6 weeks. It makes a very delicious vanilla syrup which I use in all my recipes in place of vanilla extract.
