Ingredients
- 2tablespoons butteror coconut oil
- 1medium onionchopped
- 2 carrotspeeled and chopped
- 2cloves garlicfinely chopped
- 2tablespoons tomato paste
- 8 tomatoeschopped
- 1teaspoon dried basilor 1/4 cup fresh basils leaves, chopped
- 1teaspoon salt
- 1/2teaspoon pepper
- 3cups bone broth
- 2-3tablespoons fresh cream
- Parmesan cheeseto garnish (optional)
Instructions
- Melt the butter over medium heat. Add the onion and carrot and cook for about 5 minutes until the onions are soft.
- Add the garlic and cook for another minute.
- Add the tomato paste and cook for one more minute. Add the fresh tomatoes and cook for 2 minutes. Add the basil, salt, and pepper.
- Pour in the bone broth, cover the pan, and cook for about 10 minutes until the carrots are soft. Puree the soup until smooth.
- Add the fresh cream and mix well. Check for seasonings and add more if desired. Sprinkle with parmesan cheese (optional). Enjoy!

Salaams Laura, this looks amazing, I really need to change my diet and lifestyle having many medical conditions, alhamdulillah. I dislike many dairy products unfortunately, could I omit the butter and use sunflower oil? Not sure how coconut oil would taste as I dislike the smell of that too. Often suffer from nausea so many food items I can’t eat!

Instead you could use ghee, olive oil, or avocado oil.
